The Midori Store in Fukuoka is the only Saoji eatery in Japan, and it already attracts many fans from across the country.
Now, Takashi-san is going to open "One-day Saoji" at Swagat Roppongi 2-chome.
Takashi-san, the co-owner of Midori Store, recently spent nearly one month in Nagpur to train under Saoji masters, one of whom is Shankar Saoji.
As you can see in the video, Takashi-san's skills have been not just recognized, but approved. His Fukuoka restaurant, a daily destination for craving Saoji lovers from India, is a testament to his culinary prowess.
I resonate especially with Takashi-san's idea of building a business that connects diversified labor forces, including differently abled people. I can only foresee his business growing, nurturing, and sustaining itself for a long time, bridging two countries.
